How to Make a Keto Stirfry

You never knew Keto could taste so good! I admit, when I first launched Keto in our household, I was sort of meh about the idea. But, then again, I did not realize just how much the grains were bothering us, particularly the wheat.

So, when the grains went, so did a lot of other things like eczema, and sinus issues, not to mention, better digestion. Sure, there were other things that were an adjustment, such as shoving cookies and milk into your mouth when you want a snack, but hey, we do on occasion!

The truth of the matter is that we always eat skillet suppers, but I find this idea a real COVID-friendly meal because the rolling grocery shortages on odd items still occur. But, if you have some sort of meat, frozen or fresh veggies, soy sauce or another alternative and hot sauce, you are pretty much set for a stir fry skillet supper.

Stir Fry Skillet Supper

So, some main staples I always keep on hand in the freezer or refrigerator are the meat of any sort, cauliflower rice, and coconut aminos. First, you freeze the meat and buy it in bulk if you have to. If they limit you at the store, then buy several different kinds of meat. But Spam if you have to, girlfriend. It really doesn’t matter.

Next, I always keep the cauliflower rice on hand. Even if I make soup or stew, I toss it in frozen and let it melt. The texture comes out like rice and it absorbs the flavors in your pan.

Then, I keep fresh carrots or bell peppers around for chopping. If you like onion do that too. Whatever favorite fresh vegetables you have on hand, chop them up for your stir fry skillet supper.

I get spices from anywhere I can. I love garlic and ginger, along with my coconut aminos. We just don’t do soy sauce, but use what you like and find. Then, of course, I always keep some sort of hot sauce around.

So, here is the very simple recipe.

Ingredients

1/4 cup of cooking oil (avocado, olive, or coconut oil is best)

3 cups of chopped cooked meat

A package of cauliflower rice

2 carrots, sliced or chopped

5 small bell peppers or one large one chopped

1/2 tsp of garlic powder

One-half cup of coconut aminos or soy sauce (Teriyaki is good too)

2 TBL of hot sauce or to taste.

Directions

To make any stir fry skillet supper you simply add the oil to a skillet on medium heat. Toss in the chopped vegetables and spices, then cook and stir. I usually wait to add in the cauliflower rice last because it is frozen.

Next, add in your chopped meat and stir it all together letting it fry. After about 3-5 minutes, add in your cauliflower rice and put the lid on the pan to allow it to melt and simmer. When the rice is fully defrosted, stir in your aminos and your hot sauce, then cook a few minutes more.

Serve up in bowls with Keto pasta or tortillas, or if you like, a low-carb bread alternative. Makes for a hearty meal of meat and vegetables that keep the body burning fat from fat and not carbohydrates.

If Someone Needs More Carbohydrates

Not everyone in a family always eats Keto, so I add this in. My go-to choice for carbohydrates is make-ahead rice, frozen tortillas, or pre-cooked pasta. These always work ahead of time for you and both the rice and tortillas work fine in the freezer for a quick pullout alternative.

Plus, if your family does not eat Keto but you like my idea, you can fry in your grains while you cook your stir fry. This quick easy meal works great in a pinch and makes easy leftovers. Plus, you might even change it up with a simple meat or vegetable change to add in variety.

Finally, one thing that makes a stir fry skillet supper fun is to add in interesting options you might even find online. Plenty of grocery mail order companies set up shop for this Pandemic season and sell all sorts of stir fry ingredients to add in to your meal. Try some of these:

  • No Carb noodles
  • Water chestnuts
  • Bamboo shoots
  • Mushrooms fresh or canned
  • Canned Chinese-style vegetables
  • Stir fry seasoning mixes
  • Bean sprouts, canned or fresh
  • Lemon pepper seasoning
  • Bean paste
  • Fish sauce
  • Rice noodles
  • Specialty sauces
  • Sesame seeds
  • pepper flakes
  • Five-spice powder
  • Snap peas
  • Baby corn in a can
  • Korean or Japanese barbeque sauce
  • Peanut sauce or even peanut butter

  • Egg noodles
  • Salsa

And so much more! Use your imagination and your available resources and make an amazing meal in one skillet and feed the whole family. Double the recipe if you must,
